First off, start by building a small coaster (I find Hardwood works well) and another non-coaster tracked ride (car ride, maybe?). Then just keep on building platform rides until you achieve your apprentice and entrepreneur goals, though it won't hurt to have a second coaster by the end of the entrepreneur level.
