Another way to do it is to build a bunch of shops and stalls, but ''don't open them''! Continue expanding normally, and eventually you'll get the message 'Guests are hungry and can't find anywhere to buy something to eat'. That is your cue to open all the shops and stalls, and a great wave of people will buy food, pushing your profits past $1000! If it's not enough the first time, you can reclose all the shops, but usually it works like a charm.
