First build a few rides (not roller coasters) and an infomation kiosk then complete roller coaster 4. Complete roller coaster 5 next. Next build 1 or 2 more rides (again not roller coasters) then complete roller coaster 3. Finaly build another ride and complete roller coasters 1 and 2. This should be an easier scenario since there is plenty of flat and open land.

Other Notes

Rollercoaster 5 is extremle easy. Do not lenthen the chain lift! make a vertical drop then vertical up then flaten it when it gets above ground and drop it again. Now a banked U-turn (2 normal turns) and up 6 "humps" (up then down) and another banked U-turn and add 2 more Humps.
